DIY Chinese Hot Pot at Home

For the last five or six years, we have been having Chinese hot pot at home. We used to have hot pot at restaurants then realized that for the $25+/person most restaurants charge, we could easily gather a few friends and have a really extravagant feast for a fraction of the price. And we would have lots of leftovers afterwards too.

What is Chinese hot pot?

Chinese hot pot is essentially a fondue. Raw foods are cooked in a shared pot filled with different types of broth. There are some common foods one would have at a typical hot pot meal: thinly sliced meats, leaf vegetables, mushrooms, wontons, tofu, noodles and seafood. Each person has their own bowl of cooked food and would dip the cooked food in a dipping sauce before eating. This is also a meal some families eat as part of Chinese New Year celebrations (which occurs on February 19th this year).

We usually budget about 2 to 3 hours for hosting a hot pot dinner at home; this is generally not a meal you would have on a busy weeknight.

Here are some ideas on how to host your own hot pot party.

Equipment & Utensils
  • Pot (Note: you do not need a pot if you have an electric hot pot)
The divider in the middle allows you to have two different types of broth.
  • Ladles: soup and slotted ladles
  • Communal chopsticks or tongs

  • Chopsticks, bowls and plates

Broth
Depending on the type of pot you have, you can make one or two different types of broths to use in your hot pot.
  • Meat-based broth (chicken, pork, beef)
  • Seafood-based broth
  • Spicy broth
  • Herbal broth
  • Satay* broth (aka peanut broth)

Food & Drinks
Enoki mushrooms; chop off the stems and wash thoroughly.
  • Wontons or dumplings (if frozen, no need to thaw before cooking)
  • Tofu: tofu puffs or firm tofu cut into slices
  • Noodles: udon, vermicelli
  • Seafood: shrimp, fish balls, shrimp balls, abalone, fish slices
  • Eggs (to poach in the broth at the end of the meal)
  • Alcoholic drinks (beer, sake)
  • Non-alcoholic drinks: plum drink, aloe vera, juice, pop, green tea

Sauce
Soy sauce, sriracha and Bullhead Barbecue Sauce

* Satay contains peanuts. For those with peanut allergies or food allergies, please always read labels on any packaged ingredients.

Directions
1. In a large pot over high heat, bring the broth to a boil.


2. Wash, cut and plate all hot pot ingredients.

3. Mix your dipping sauce. I love mixing Bullhead BBQ Sauce, soy sauce and sriracha together.  You can also add a raw egg into this mixture if you like. (Note: consumption of raw eggs is not advisable for everyone).

Mix, taste and adjust.

4. Pour broth into the hot pot and bring the broth back to a boil. Once it reaches a boil, lower the heat so it is at a gentle simmer.


4. If using a pot with a divider, you can use different types of broths. Most people like to have a plain meat or seafood based broth and the other broth to be spicy or flavored. Alternatively, you can use the same broth on both sides and designate one side for meats and the other side for seafood/vegetables/noodles/dumplings.

I prefer using chicken broth on both sides and cooking my meats separate from everything else.

5. Place ingredients in the hot pot, making sure not to overcrowd the pot.

6. Using slotted ladles, take out the food and place on each person's bowl.

7. Serve hot with dipping sauce. The broth that is used to cook the hot pot can be quite delicious; I like to save the seafood/vegetable hot pot broth along with any leftovers to make a soup the next day.


TIPS
  • I like to boil my broth on the stove as it is a cheaper and quicker way of boiling the broth. Those butane gas canisters can get expensive!
  • Boil more broth than you think you need as the broth evaporates as you cook more food.
  • Use communal chopsticks and scoops. It is rude and gross to use your own chopsticks to fish out food.
  • Leftover ingredients make delicious stir fries or soups the next day. Check my recipe tomorrow for Fish Ball Soup which uses leftover hot pot ingredients.
  • For those with food allergies, you can easily avoid your allergens by using a clean pot and reading ingredients on packages. Use whole foods to avoid cross contamination. This is one reason why we also make hot pot at home for our nut allergic little man.

3 Ingredient Vanilla Rice Milk (Free of Top Allergens)

Somethings are better homemade. Such is the case with this vanilla rice milk recipe.


On a recent grocery trip, I saw rice milk on sale for $2 for an one litre carton. As part of our nut-free life (my little man has peanut and almond allergies), we read every label and ingredients list. And what do you know, the rice milk has a "may contains" statement for tree nuts so we did not buy it.

Eleven months into nut-free living, I have grown accustomed to making things from scratch. So why not make my own rice milk? I searched the internet and came across a recipe posted by Vitamix (who makes high speed blenders) for a rice milk recipe that only uses 3 ingredients.

The recipe is incredibly simple, yet I still managed to screw it up.

The first time I made it, I doubled the recipe. In my attempt to cajole a hungry toddler, I left out a tablespoon of sugar. Then I added too much of the wrong type of vanilla extract (instead of clear vanilla) which turned the rice milk to a chocolate brown color. The last mistake I made was that I did not blend the rice milk long enough which made the rice milk lumpy. Three big mistakes for an almost foolproof recipe that has only 1 step.

Before I started this blog, I would have called it a day and tried it another time. Since I am committed to all of you, I decided to make this rice milk recipe again.

After following instructions properly this time and learning from my mistakes, the rice milk turned out nice and creamy. My husband and I both agreed it is quite delicious.

This recipe is free of all allergens (except rice), cheap (it costs pennies to make), environmentally friendly (no carbon footprint) and best of all, it is tasty (and free of safflower oil which is in commercially made rice milk)! Have I convinced you yet?

So say farewell to the tetra packs of rice milk and say hello to homemade rice milk. Cheaper, tastier and better for you and the environment!

Ingredients
1/2 cup cooked rice (white or brown, long grain or short grain), cooled to room temperature
2 cups cold filtered water
1 tbsp sugar (white or brown) or sugar substitute (honey)
1 tsp vanilla (optional - regular or clear)
More water for diluting (optional)

Directions
1. Add rice, water, sugar and vanilla to a blender and close the lid.
  • High speed blender (Vitamix, Blendtec): Blend on high for 3 minutes. (Vitamix instructions only: Select variable 1. Turn machine on gradually to variable 10 and then to high. Blend for 3 minutes or until desired consistency is reached). 
  • Regular blender: Blend on high for 5 to 7 minutes or until the desired consistency is reached. You can strain the rice milk for a smoother taste.

2. Taste and dilute with more water (if needed). Refrigerate the rice milk until it is chilled. Shake before drinking.


TIPS
  • If you use white rice, use clear vanilla and white sugar unless you want chocolate colored rice milk. I love chocolate so if it is chocolate colored, it better have chocolate in it!

Chocolate milk or vanilla rice milk?
  • Use more sugar if you like your rice milk sweeter
  • Blend the rice milk in batches if you are doubling or tripling the recipe.
  • Chill the rice milk in the refrigerator for at least an hour or two.

Chipotle Aioli

If you love sweet potato fries, you have to make this chipotle aioli. The spiciness from the chipotle powder combined with the creaminess of the mayo pairs wonderfully with sweet potato fries (try this homemade recipe here). If you have any aioli leftover, this would also make an amazing spread for sandwiches or wraps too!


Ingredients
1 cup mayonnaise
1 tsp chipotle powder
1/2 tsp garlic powder
1/2 tsp lemon juice
Dash of sea salt

Directions
1. In a bowl, mix mayonnaise, chipotle powder, garlic powder, lemon juice and sea salt.


2. Chill the chipotle aioli in the refrigerator until needed. Serve with sweet potato fries or as a spread for a sandwich or wrap.
