10 Minute Cast Iron Pulled Pork Tortilla Pizza

There is no doubt that I love efficiency. A new and better way to improve on an existing method always makes me giddy. So it is no wonder that when I saw a 10 minute pizza recipe from Serious Eats that I tried it immediately.


In the Serious Eats article, they used a cast iron skillet to make a crisp and delicious pizza from flour tortillas. From start to finish, this recipe takes no more than 10 minutes, which includes preheating the cast iron pan on the stove and broiling the pizza in the oven.

We used Mission Flour Tortillas which are nut-free. This will likely be a recipe we would use again and again.

Ingredients
1/2 cup pulled pork
1/4 cup shredded Mozzarella cheese

Directions
1. In a cast iron pan over high heat, drizzle vegetable oil. Once the oil starts to shimmer, reduce heat to low.


2. Using a paper towel, spread the oil so that it evenly coats the cast iron pan.

3. Place the flour tortilla (mine were frozen) with the side with larger bubbles up (smaller bubbles side down) in the cast iron pan. According to Serious Eats, this helps puff up the tortilla. If you forget, I'm sure it is not the end of the world either.

4. Add the pulled pork and mozzarella cheese.


5. Turn off the stove. Turn on the oven to medium-high broil and adjust the oven rack to the highest position possible. Place the cast iron pan inside.

6. Broil the tortilla pizza for 3 to 5 minutes until the cheese is melted and bubbling. Remove from the oven and using a spatula, lift the tortilla pizza to a cutting board.
