Grilled Cheese Pizza Panini

My husband is the Grilled Cheese Sandwich King. He loves to make it and eat it. In the past 3 days, we had grilled cheese sandwiches twice.

We used to butter the breads heavily and pan fry the grilled cheese sandwiches. While it is super delicious and yummy, it really was not helping our bulging waistline.

My husband came up with this Grilled Cheese Pizza Panini, which uses only a little bit of butter but it is full of flavor. Next time you are craving a grilled cheese, try this recipe instead.

Ingredients
2 slices of bread
1 slice of cheddar cheese, enough to cover the bread
1 tbsp tomato paste
Sprinkle of oregano
Butter

Directions
1. Preheat a panini grill or heat a medium sized non-stick pan on medium high heat.

2. Lightly butter each slice of bread.

3. Flip the bread over so the non-buttered side is facing up.

4. Spread tomato paste, sprinkle oregano and place cheese on the non-buttered side.

5. Close the sandwich and place it on the panini grill or in a non-stick pan.

6. Grill the sandwich until the crust is light brown and the cheese is melted. Cut in triangles (apparently, that's my husband's favorite way of eating grilled cheese sandwiches) and serve.
