One Pot Tomato Basil Parmesan Pasta

One pot pasta has been extremely popular on Pinterest since last year. I made this One Pot Pasta after seeing it on Martha Stewart late last summer. Since fresh basil really makes this pasta shine, it took a full year before I made it again.

This recipe is so simple, this is a "Prep It and Leave It" recipe. You would prep the ingredients, put everything in one pot and leave it to cook.


Serves: 4

Ingredients
1 lb spaghetti
3 large tomatoes, cut into large pieces
1 medium onion, thinly sliced
6 cloves of garlic, thinly sliced
12 basil leaves
2 tbsp olive oil
4-1/2 cups of cold water
Freshly ground black pepper
Freshly grated parmesan cheese, for serving
Basil, for serving

Directions
1) In a large pot over high heat, put all the ingredients into the pot except the Parmesan cheese. Bring to a boil over high heat.


2) Turn the heat down to medium high, stirring occasionally until the pasta is al-dente and most of the liquid has evaporated.


3) Serve with fresh basil and Parmesan cheese.
